Culinary Arts with Holistic Nutrition

Culinary Arts with Holistic Nutrition is the marriage of cooking with the science of nutrition. Very simply, chefs need to know how to prepare and cook nutritious food. The curriculum provides students with a broad range of study that enable them to be employed in a large variety of occupations within the food service and hospitality industry. This program is designed for students who seek to apply nutrition principles to their culinary skills.
Diploma/Certificate in Culinary Arts with Holistic Nutrition is a trademark of the Culinary Institute of Cagayan de Oro and is meant to promote changes in menu planning, food purchasing, preparation and consumption behaviour with a goal of fostering good health through proper nutrition.
The difference in flavors, the difference in textures, the difference in colors – it’s absolutely amazing what switching from a red tomato to an orange tomato can do in terms of the color of the dish and the flavors you get in whatever you’re making. This creativity in cooking and food preparation can go a long way in convincing people to try different things when it comes to healthy eating.

Certificate and Diploma Programs

Duration: 1 year including 450 Hours OJT

The Culinary Institute of Cagayan de Oro (CIC) offers a 1 year Certificate/Diploma Program in Culinary Arts with Holistic Nutrition focusing on Fundamentals, International Cuisine, Bread and Pastry Arts with 450 hours of Related Learning Experience (OJT). The certificate program is divided into 4 modules with a final month of practical exams and Grand Buffet.

The program is very comprehensive and skills oriented. The students are also given exams, written, oral and hands-on to test the level of competency acquired.

Duration: 7 months including 450 OJT

A 7-month intensive program focusing on Fundamentals, International Cuisine, Bread and Pastry Arts with 450 hrs of Related Learning Experience (OJT). Classes are from 8am to 5 pm, twice a week. This course is designed for those who need to finish the course in a shorter period of time.
Duration: 1.5 yrs including 550 Hours OJT

A 7-month intensive program focusing on Fundamentals, International Cuisine, Bread and Pastry Arts with 450 hrs of Related Learning Experience (OJT). Classes are from 8am to 5 pm, twice a week. This course is designed for those who need to finish the course in a shorter period of time.
Duration: 7 months including 200 hours OJT

Certificate/Diploma of Applied Science in Baking and Pastry Arts provides a broad foundation of baking and pastry theory and practical training necessary for success in the food service industry. Students will learn the art of creating tasty baked goods, pastries, and confections, from traditional bread baking to beautiful showpieces, plus coffee brewing and latte art. Students will also learn to use sugar, syrups, icing, and chocolate. Prepare for a career as a professional baker or pastry chef in a bakery, restaurant, hotel, or resort.
Duration: 3 months including 200 hours OJT

The Barista Training aims to provide the maximum amount of practical experience to the student by doing total hands-on training under the supervision of experienced Barista Instructors.

The course is 90% practical, with a thorough understanding of coffee beans, the right practices, and the art of preparing the perfect cup of coffee. Students are then geared for a culminating activity, the Mock Cafe.

In addition to developing brewing skills, this program is highlighted with Café Management subjects to equip barista students on the business side of operating a coffee shop.

Fast - Track Curse

Fast-track Culinary Arts “tailor-made" for BALIKBAYANS and OFWs

Another first from CIC-for BALIKBAYANS and OFWs! Our Culinary Arts program may be offered as a fast-track course depending on the specific needs and time constraints of a Balikbayan or an OFW. A custom-made schedule may be planned in consultation with our academic team and the prospective student. Thus when satisfactorily completed, a BALIKBAYAN / OFW can be a professionally trained culinarian! This may also be complemented with our other short courses. UNIQUE only to CIC.
Young Chefs Summer Program is in our 1st delicious season! Open to Kiddie Chefs, from 7-12 yrs old and Teen Chefs ages, from 13-up.

Kiddie Chefs workshop is for budding cooks age 7-12 yrs old! Ahh! There’s nothing like the smell of something baking in the oven! We’ll begin with ingredients vital to baking; then explore the magic of sugar with cookie frosting and cake pops decorating. And we’ll top it off with a cookie/brownie “Top Chef” style bake-off! Mmmm, life is sweet!

Just imagine… you will learn all the culinary skills & tricks to whip up a quick, delicious meal.

• Italian Cuisine – This course is an overview of Italian cooking and why this may be one of the most loved cooking styles. You will sample the foods prepared and receive recipes. Recipes include Tomato, Pesto and Mozzarella Bruschetta, Clam Chowder Soup, Creamy Lasagna, Chicken Parmigiana, Pepperoni Pizza and Panacotta.

• Spanish Cuisine – Looking for the perfect croquette recipe? Want to know how a true paella is made? Then sign up for our Spanish cooking class! We combine all the necessary ingredients for you to improve your Spanish skills. Recipes include Huevos rellenos de atun (tuna stuffed egg), Ham and Cheese Croquettes, Paella Valenciana (seafood paella), Menudo Sulipena (oxtail stew), Gambas al Ajillo (sautéed shrimp) and Churros with Chocolate Sauce.

• Chinese Cuisine – Come join CIC Chefs in a hands-on Chinese cooking class filled with tips and recipes designed to encourage the beginning chef. Each class culminates in a fabulous Chinese luncheon feast that you’ve helped prepare! Recipes include Yang Chow Fried Rice, Stir Fried Beef and Broccoli in Oyster Sauce, Soy Braised Chicken, Shrimp Siomai, Ground Pork Lettuce Wrap with Hoisin Sauce and Steamed Fish with Tausi Sauce.

• Japanese Cuisine – An overview of Japanese cooking and why this may be one of the healthiest ways to eat. You will sample the foods prepared and receive recipes. Recipes include Tekka Maki, California Maki, Tuna Sashimi, Sukiyaki, Chicken Teriyaki, Tempura and Japanese Fried Rice.

• Thai Cuisine – Try one of our excellent Thai cooking classes for a day and get to grips with how to make authentic and delicious dishes with a CIC chef. This is an excellent introduction to simplifying Thai cooking. Our chef will show you the essential ingredients of authentic Thai cooking. Everything you will need is supplied on the day of your Thai cooking class, all you need to bring is enthusiasm. Recipes include Tom Yam Goong (hot and sour shrimp soup), Beef Curry, Gai haw bai toey (pandan fried chicken), Paad Thai (stir fried noodles), Khao klul kapi ( bagoong fried rice), Tup Tim Grod (Thai halo-halo).

This workshop is for baking enthusiasts who want to learn how to bake and decorate cakes but cannot attend a full course. An extensive 5 day course which cover baking cakes and pastries. A basic cream piping cake decoration is also being introduced. The course also gives students a further study in bread making methods. Learn the special techniques involve in straight dough, sponge dough and no time dough.

CIC chefs will lead you every step of the way as you create amazing hand shaped flowers, beautiful borders and bold accents using these easy-to-shape icings. As you learn each technique – an artful bow, mum, rose, carnation, calla lily, rosebud, daisy, and embellished borders – you’ll be closer to your crowning achievement: A Workshop Cake that showcases your skills. The confidence you’ll gain as you decorate with gum paste and fondant will enable you to create cakes that will add excitement to your family celebrations for years to come.

This is the perfect introduction for anyone new to working with chocolate, or wishing to develop existing skills. Learn the secrets to creating beautiful and delicious chocolate cakes. This course provides a basic study in the art and craft of bread making. Topics include pertinent formulas and techniques associated with naturally leavened loaves, Focaccia and other breads. • Half day workshop on Cupcakes – Cupcakes are delicious treat that increases the fun of holiday celebration. By the end of this workshop, you will be able to bake perfect and delectable cupcakes, such as Butter Cupcakes, Chocolate Cupcakes, Carrot Walnut Cupcakes, Red Velvet Cupcakes and Strawberry Cupcakes.

• Half day workshop on Cookies – Cookies are a fun to prepare and delicious to eat. In this workshop, you will learn to bake Chocolate Chip Cookies, Oatmeal Cookies, Florentines, Butter Cookies, Peanut butter Cookies and French Macaroons.

• Half day workshop on Cheese cakes – This workshop covers recipes of great tasting cheese cakes. By the end of this workshop, you will learn to prepare the fabulous and delicious cheese cakes, namely New York Cheesecake, Blueberry Cheesecake, Strawberry Cheesecake, Coffee Cheesecake, Chocolate Cheesecake and Marble Cheesecake.

The CERTIFICATE in CATERING and RESTAURANT OPERATIONS is a 14-session course designed for people who want to be food entrepreneurs. The school’s well-rounded curriculum includes an array of business opportunities like foodcart operations, restaurant and catering operations and basic food processing.
